Pieous is famous for its Neapolitan pizza, but barbecue connoisseurs know it for the pastrami — the owners bought the old Cartwright's Bar-B-Q, smoker included, and put it to work: brisket cured for 20 days and smoked for 14 hours in house, half a pound of it on their sourdough with homemade whole grain mustard. This isn't mass-produced pastrami; it's small batch, so go early. Texas Monthly's Daniel Vaughn called it some of the best pastrami he has eaten — including a few famous places in New York.
